My Hubs loves chocolate chip cookies and cake with Buttercream icing…

So for Dad’s Day I gave him both…

In one….

Behold, the “Chocolate chip cookie dough cupcake”


Why yes, that’s chocolate chip cake filled with eggless chocolate chip cookie dough topped with chocolate chip buttercream…..

*cue angels singing*

These were seriously, seriously good and crazy rich. Serve with a quart of milk…Also, they’re fairly labor intensive so don’t make them for anyone that you don’t really love a lot!

Chocolate Chip Cookie Dough Cupcakes

  • For the cupcakes:
  • 2 sticks unsalted butter, at room temperature
  • 1 1/2 cups light brown sugar, packed
  • 4 large eggs
  • 2 2/3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup milk
  • 2 teaspoon vanilla extract
  • 1 cup chocolate chips (semisweet or bittersweet)


  • For the filling:
  • 4 tablespoons unsalted butter, at room temperature
  • 6 tablespoons light brown sugar, packed
  • 1 cup plus 2 tablespoons all-purpose flour
  • 7 ounce sweetened condensed milk
  • 1/2 teaspoon vanilla extract
  • 1/4 cup mini semisweet chocolate chips (plus extra for decorating)


  • For the frosting:
  • 3 sticks unsalted butter, at room temperature
  • 3/4 cup light brown sugar, packed
  • 3 1/2 cups confectioners sugar
  • 3/4 teaspoon salt
  • 3 tablespoons milk
  • 2 1/2 teaspoons vanilla extract
  1. To make the cupcakes, preheat the oven to 350F. Line two cupcake pans with paper liners (about 20). In the bowl of a stand mixer fitted with the paddle attachment, combine the butter and brown sugar. Beat together on medium-high speed until light and fluffy, about 3 minutes. Mix in the eggs one at a time, beating well after each addition and scraping down the sides of the bowl as needed.
  2. Combine the flour, baking powder, baking soda, and salt in a medium bowl. Stir together to blend. Add the dry ingredients to the mixer bowl on low speed, alternating with the milk, beginning and ending with the dry ingredients, mixing each addition just until incorporated. Blend in the vanilla. Fold in the chocolate chips with a spatula.
  3. Divide the batter evenly between the prepared cupcake liners. Bake for 18-20 minutes, until a toothpick inserted in the center comes out clean. Allow to cool in the pan 5-10 minutes, then transfer to a wire rack to cool completely.
  4. To make the cookie dough filling, combine the butter and sugar in a mixing bowl and cream on medium-high speed until light and fluffy, about 2 minutes. Beat in the flour, sweetened condensed milk and vanilla until incorporated and smooth. Stir in the chocolate chips. Cover with plastic wrap and refrigerate until the mixture has firmed up a bit, about an hour.
  5. To fill the cupcakes, cut a cone-shaped portion out of the center of each cupcake. Fill each hole with a chunk of the chilled cookie dough mixture.
  6. To make the frosting, beat together the butter and brown sugar in the bowl of a stand mixer fitted with the paddle attachment until creamy. Mix in the confectioners sugar until smooth. Mix in the salt, milk, and vanilla extract until smooth and well blended.
  7. Frost the filled cupcakes as desired, sprinkling with mini chocolate chips for decoration.

They really do taste like cookie dough! I’ve never made butter cream with brown sugar before but I’m now a fan….

PS…the filling makes about twice what you need but is kinda fabulous as a dip for graham crackers. I’m just sayin’….. 🙂

Hubs is totally worth these, plus the bacon omelets, hash brown casserole, BBQ chicken and smashed taters that he requested for brunch and supper on his special day….

My Hubs is the worlds most patient Dad….

He became a Dad 13 years ago, not with the birth of a sweet little ChubChub…nope, he became a Dad by marrying me and taking on not one but TWO teenage girls.

I think the fact that he’s clearly out of his mind is one of my favorite things about him!!


He loves us unconditionally. Laughs with us, cries with us and loves us even when we are at our worst and most unlovable….

We love him right back!

Now, want to hear the sad/funny/ironic/stupid part? I can’t use the name on Etsy. It’s taken! As are about 67 (seriously) other names involving “Grammy” or “Gram”. Shoulda done some research huh?? Who friggin’ knew?????

So, the name of my shop will be “ALL DISTRESSED OUT by GramCrafter” ….Distressed ‘cuz that’s what I like to do to stuff; tear it, wrinkle it, stain it, crackle it, whack the crap out of the wood, sand it in weird ways and otherwise make it look old and shabby!

I’m working on inventory, I have 5 bags done. I’m working on some picture frame fridge magnets today. Tomorrow I am working on a wood/mason jar wall sconce, and maybe a pallet wood wall plaque thingiemabobber….I’m hoping to have enough done to open the shop in the next 2 or 3 weeks. I’ll be posting samples on here to get opinions!

And…..TODAY IS PEANUT BABY DAY! I’m so excited since I had to give up my day last week, and we’re going craft supply shopping, also looking for a swing for her that Poppa can hang in the backyard ‘cuz our Peanut giggles when she swings and that’s a sound I cannot get enough of!  Shopping will possibly be followed by a nap….

I had my annual performance review at work yesterday, which at first I thought was silly and kinda pointless but actually ended up being a very good thing. The BigBossMan gave me a great review and I’d be getting a raise if I wasn’t leaving. He asked for my thoughts on things they can do to improve the working environment for my position, including the need for some training on proper lifting techniques. He also asked me to make a training manual on some of my processes and told me I would be missed and they’re sad to see me go. Truth be told, I’m a little sad myself….

When I gave my notice, I offered to come back in August when he goes on vacation to cover for him because I knew there was no way they could get a new person trained for that in such a short amount of time, but I didn’t really expect them to take me up on it. Turns out they are! And are grateful for the help which makes me feel really good…

I’m very happy to be leaving on good terms, I can’t even tell you how much that means to me, it makes my little heart smile….

See???? I am TOO a good effin’ person dammit!!!!

Stoooopid Middle Age…


I’ve recently discovered another fun little side effect of Middle Age: RESTLESS LEG SYNDROME. Except I have it in my arms too….’cuz I’m an f*cking overachiever.

Unfamiliar with RLS? Let me educate you…it’s a combination of a sleep disorder and nervous system disorder that causes weird sensations in the legs (and arms) and an irresistible urge to move to relieve said sensations. It makes your ass twitchy. Like a crack ho’….

This is how I feel about effin’ RLS. Any questions??









It’s 1 in the frickin’ morning and I should be sleeping as my alarm will squawk at me in about 4 1/2 hours but I’m not. I’m twitchy. I’m twitchy and I have the creepy crawlies. I’m twitchy and I have the creepy crawlies and I can’t be still. Can’t. C.A.N.N.O.T.

And it’s pissin’ me off….

Isn’t it enough that being a woman of a certain age I have to deal with mood swings, power surges hot flashes, night sweats, weight gain and the occasional unstoppable need to fart?? I gotta be a twitchy crack ho too???

It ain’t right….

But right or not, regardless of how unjustified the situation, here I am up in the middle of the night doing jumping jacks and yoga. Seriously. Jumping Jacks. ‘Cuz Web-effin’-MD says stretching may make the twitching stop. And I’m desperate. So I’m jumpin’….


Stoooopid Middle Age bullshit. The only good thing about RLS is that men get it too. Which only makes me feel slightly better….










Pirates do too. But in them it’s called Restless Peg Syndrome.

Sleep deprivation. It’s where corny jokes are born.
