Chocolate Chip Scones

Mmmmmmm……That’s all I can say about these beautiful crumbly scones that Chef Vivi made for us. And while I was only taking the photos, it looked pretty simple and certainly didn’t take long at all!

  • 3 cups All-purpose Flour
  • 2/3 cups Sugar
  • 5 teaspoons Baking Powder
  • 1/4 teaspoons Salt
  • 2 sticks (1/2 Pound) Butter, Chilled
  • 1 whole Large Egg
  • 3/4 cups Heavy Cream (more If Needed)
  • 2 teaspoons Vanilla Bean paste
  • 1 cup Semi-sweet Chocolate Chips

  • 2 cups Powdered Sugar, Sifted
  • 1/4 cup Whole Milk
  • 1 teaspoon Vanilla Bean paste
  • Dash Of Salt
  • 1 teaspoon Lemon juice

Preheat your oven to 350. Sift together flour, granulated sugar, salt and baking powder. Cut cold butter into pats and cut into dry ingredients using a pastry cutter or a fork. (I always just use a fork, so did Vivi) Keep going until it resembles crumbs.

Mix Vanilla Bean Paste with cream, then mix in eggs. Pour into flour mixture and stir gently until it just comes together.

Stir in Chocolate Chips.

Turn out onto floured surface and pat and lightly press together to form a circle. (It will be crumbly, it’s ok!)

Using a long bladed knife or a pizza cutter, cut circle in half. Then cut the halves in half. Now you have 4, Do it again and you have 8, one more time and you should have 16 perfectly proportioned wedges!

Place on parchment paper (or buttered foil if you’re like me and out of parchment, oops!) and bake for 18 minutes or just until they start to brown slightly. Do not over bake! Remove from oven and allow to completely.

For the Glaze:

Mix Vanilla Bean paste with milk in large bowl, add lemon juice, salt and powdered sugar and whisk until completely smooth. Put some into a small ziplock bag…

Snip off a tiny corner of the bag and drizzle glaze onto cooled scones.

These are soooooo good and will keep for about a week in an airtight container.

Enjoy with a nice cup of coffee or Chai Latte! *hint hint!*
