Ok, Lest you think the only things we eat around here are fried stuff and pie, here is a healthy supper! Pay attention, this is gonna be quick…

Chicken and Broccoli

3 boneless, skinless chicken breasts (or 1 per person)

1 head broccoli

3 oz Cheddar or Monterey Jack Cheese

1/2 teaspoon nutmeg

sea salt and fresh ground pepper to taste

cooking spray


 Rinse and pat dry the chicken breasts, salt and pepper on each side. Cut broccoli into florets. Shred cheese.

Cook chicken in large skillet sprayed with cooking spray until golden brown. Move to cutting board to cool slightly.

 While chicken cooks, put broccoli florets into large microwave safe bowl. Add 1 teaspoon water and cover with plastic wrap. Microwave for 3 1/2 minutes. (Did you know that your microwave is a great, inexpensive way to perfectly steam fresh veggies?? Leave a comment and ask me for a cooking time chart!)

 Put steamed broccoli into same skillet, sprinkle with nutmeg and salt to taste. Let it brown ever so slightly while you cube the chicken breasts. Add chicken back to skillet, sprinkle with shredded cheese. Serve as soon as the cheese melts!

 Done, in less than 30 minutes! Simple, tasty, healthy and certainly won’t make anyone Fluffy!!
